What’s For Dinner Stephen?

Great question! One of the things I want to do a lot more is eat and cook at home. Although it’s convenient to just run to the restaurant whenever I’ve got the munchies, you can’t really control what goes into your food, even in the best restaurants. So tonight, I was rummaging around the fridge and found the following ingredients to work with…
- Pork Chops
- Onions
- Mushrooms
- Spinach
- Beer
It looks like a pretty good mix of ingredients, so I went to work right away. I seasoned up the pork chops with a rub of garlic and seasoning salt and seared them on both sides. Then I tossed them into the oven with the onions and the mushrooms. While that was happening, I boiled the spinach up for some veggies and out came this…

Because I finished the pork chops in the oven, they turned out really tender. I sliced them and put them on top of a bed of boiled spinach. Then I stacked the mushrooms and onions on top. The brown stuff is just some balsamic vinegar. I ddn’t want to wait to reduce it so I just heated it up and drizzled it on top. It turned out better than I expected, and the pork was super tender and juicy.

The beer was for me and provided my balance of carbohydrates with my protein and veggies. No cooking required ;)
